R\u00e9alis\u00e9 dans le moule \u00ab\u00a0ying yang\u00a0\u00bb il se compose d&rsquo;une mousse au chocolat noir et une mousse au chocolat blanc, chacun d&rsquo;entre eux sur un brownie aux deux chocolats \u00e9galement \ud83d\ude09<\/p>\n\n\n\n<!--more voir la recette-->\n\n\n\n<h3><div>Les ingr\u00e9dients :<\/div><\/h3>\n\n\n\n<h4><strong><em>Pour le brownie au chocolat blanc&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<ul><li>3&nbsp;oeufs<\/li><li>100 g de beurre<\/li><li>60 g de farine<\/li><li>200 g de pistoles de chocolat blanc Valrhona<\/li><li>70 g de sucre<\/li><li>1 pinc\u00e9e de sel<\/li><li>50 g noisettes pr\u00e9alablement caram\u00e9lis\u00e9es \u00e0 la po\u00eale avec un peu de sucre<\/li><\/ul>\n\n\n\n<h4><strong><em>Pour le brownie au chocolat noir&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<ul><li>160 g de chocolat noir 61% Valrhona<\/li><li>125 g de beurre<\/li><li>100 g de sucre<\/li><li>60 g de farine<\/li><li>1 sachet de sucre vanil\u00e9e<\/li><li>2 oeufs<\/li><li>1 pinc\u00e9e de sel<\/li><li>50 g de noix de p\u00e9can <\/li><\/ul>\n\n\n\n<h4><em><strong>Pour la mousse au chocolat noir :<\/strong><\/em><\/h4>\n\n\n\n<ul><li>60 g de lait entier<\/li><li>160 g de chocolat noir <\/li><li>400 g de cr\u00e8me fleurette<\/li><\/ul>\n\n\n\n<h4><strong><em>Pour la mousse ivoire :<\/em><\/strong><\/h4>\n\n\n\n<ul><li>200 g de pistoles de chocolat blanc Valrhona<\/li><li>100 g de lait <\/li><li>200g de cr\u00e8me fleurette<\/li><li>1,5 feuille de g\u00e9latine (3 g)<\/li><\/ul>\n\n\n\n<h4><em><strong>Pour le gla\u00e7age miroir&nbsp;blanc&nbsp;:<\/strong><\/em><\/h4>\n\n\n\n<ul><li>150 g de sucre en poudre<\/li><li>150 g de glucose en sirop<\/li><li>80 g d\u2019eau<\/li><li>100 g de lait concentr\u00e9 sucr\u00e9<\/li><li>150 g de chocolat blanc&nbsp;(Ivoire de Valrhona)<\/li><li>4,5 feuilles de g\u00e9latine<\/li><li>Colorant blanc<\/li><\/ul>\n\n\n\n<h4><strong><em>Pour le gla\u00e7age miroir cacao :<\/em><\/strong><\/h4>\n\n\n\n<ul><li>4 feuilles de g\u00e9latine <\/li><li>50 g de cacao en poudre<\/li><li>120 g d&rsquo;eau <\/li><li>145 g de sucre en poudre<\/li><li>100 g de cr\u00e8me liquide enti\u00e8re<\/li><\/ul>\n\n\n\n<h3>Comment faire :<\/h3>\n\n\n\n<h4><strong><em>Pr\u00e9parer le brownie au chocolat blanc&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0<\/p>\n\n\n\n<p>Beurrer et chemiser de papier sulfuris\u00e9, un\nplat ou une plaque allant au four.<\/p>\n\n\n\n<p>Faire fondre le chocolat blanc et le beurre\nau bain marie.<\/p>\n\n\n\n<p>Fouetter les \u0153ufs avec le sucre.<\/p>\n\n\n\n<p>Ajouter la farine et m\u00e9langer d\u00e9licatement.<\/p>\n\n\n\n<p>Ajouter la pinc\u00e9e de sel.<\/p>\n\n\n\n<p>Ajouter le chocolat et beurre fondu.<\/p>\n\n\n\n<p>Verser la p\u00e2te dans le moule (plat\/plaque)<\/p>\n\n\n\n<p>Enfourner 20 minutes puis laisser refroidir<\/p>\n\n\n\n<p>D\u00e9couper la forme et la taille correspondant au moule de l\u2019entremet.<\/p>\n\n\n\n<h4><strong><em>Pr\u00e9parer le brownie au chocolat noir&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<p>Pr\u00e9chauffez le four \u00e0 180\u00b0<\/p>\n\n\n\n<p>Beurrez et chemiser de papier sulfuris\u00e9, un\nplat ou une plaque allant au four.<\/p>\n\n\n\n<p>Faire fondre le chocolat et le beurre au bain\nmarie.<\/p>\n\n\n\n<p>Ajouter les sucres et m\u00e9langer.<\/p>\n\n\n\n<p>Ajouter les \u0153ufs un \u00e0 un en m\u00e9langeant entre\nchaque.<\/p>\n\n\n\n<p>Ajouter la pinc\u00e9e de sel.<\/p>\n\n\n\n<p>Ajouter enfin la farine puis les noix de\np\u00e9can grossi\u00e8rement hach\u00e9es.<\/p>\n\n\n\n<p>Versez la p\u00e2te dans le moule (plat\/plaque)<\/p>\n\n\n\n<p>Enfourner 20 minutes puis laisser refroidir.<\/p>\n\n\n\n<p>D\u00e9couper la forme et la taille correspondant au moule de l\u2019entremet.<\/p>\n\n\n\n<h4><strong><em>Pr\u00e9parer la mousse au chocolat noir&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<p>Faire fondre le chocolat au bain-marie.<\/p>\n\n\n\n<p>Porter le lait \u00e0 \u00e9bullition et le verser sur le chocolat. M\u00e9langer \u00e0 l\u2019aide d\u2019une maryse pour obtenir une ganache lisse et brillante.<\/p>\n\n\n\n<p>Laisser ti\u00e9dir un peu.<\/p>\n\n\n\n<p>Monter la cr\u00e8me en chantilly.<br> Ajouter un tiers de cr\u00e8me, m\u00e9langer, puis ajouter le reste et m\u00e9langer de nouveau.<\/p>\n\n\n\n<h4><strong><em>Pr\u00e9parer le mousse\nivoire&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<p>Faire fondre le\nchocolat au bain marie tr\u00e8s doux afin que le chocolat ne chauffe pas trop et ne\nd\u00e9passe pas 45\u00b0<\/p>\n\n\n\n<p>M\u00e9langer \u00e0 la spatule jusqu\u2019\u00e0 ce qu\u2019il soit\ntr\u00e8s fluide.<\/p>\n\n\n\n<p>Mettre la g\u00e9latine \u00e0 ramollir dans un\nsaladier d\u2019eau froide.<\/p>\n\n\n\n<p>Dans une petite\ncasserole&nbsp;faire chauffer le lait. Porter \u00e0 \u00e9bullition, et retirer la\ncasserole du feu.<\/p>\n\n\n\n<p>Ajouter\nla&nbsp;g\u00e9latine essor\u00e9e et bien m\u00e9langer. <\/p>\n\n\n\n<p>Verser le\nlait&nbsp;en filet&nbsp;sur le chocolat fondu, en m\u00e9langeant sans cesse \u00e0 la\nmaryse. <\/p>\n\n\n\n<p>Laisser ti\u00e9dir\njusqu\u2019\u00e0 ce que le m\u00e9lange descende \u00e0 35\u00b0<\/p>\n\n\n\n<p>Monter la cr\u00e8me en\nchantilly pas trop ferme.<\/p>\n\n\n\n<p>D\u00e8s que le chocolat a atteint les 35\u00b0, l\u2019ajouter \u00e0 la cr\u00e8me en m\u00e9langeant d\u00e9licatement \u00e0 la spatule jusqu\u2019\u00e0 ce que la cr\u00e8me soit lisse et homog\u00e8ne.<\/p>\n\n\n\n<h4><strong><em>Pr\u00e9parer le gla\u00e7age blanc&nbsp;:<\/em><\/strong><\/h4>\n\n\n\n<p>Mettre la g\u00e9latine \u00e0 tremper dans un saladier d\u2019eau froide.<\/p>\n\n\n\n<p>Verser l\u2019eau, le sucre et le glucose dans une casserole et porter\n\u00e0 \u00e9bullition \u00e0 103\u00b0C.<\/p>\n\n\n\n<p>Retirer du feu, ajouter le lait concentr\u00e9 sucr\u00e9 et la g\u00e9latine\n\u00e9goutt\u00e9e puis&nbsp;le chocolat.<\/p>\n\n\n\n<p>Ajouter le colorant.<\/p>\n\n\n\n<p>Verser dans un pichet haut et \u00e9troit, et mixer \u00e0 l\u2019aide d\u2019un\nmixeur plongeant en \u00e9vitant d\u2019incorporer de l\u2019air sans jamais le soulever.<\/p>\n\n\n\n<p>D\u00e9poser un film au contact du gla\u00e7age et r\u00e9server au r\u00e9frig\u00e9rateur\njusqu\u2019au lendemain.&nbsp;<\/p>\n\n\n\n<h4><strong><em>Pr\u00e9parer le gla\u00e7age miroir cacao :<\/em><\/strong><\/h4>\n\n\n\n<p>Mettre la g\u00e9latine \u00e0 ramollir dans un\nsaladier d\u2019eau froide.<\/p>\n\n\n\n<p>Dans une casserole, porter \u00e0\n\u00e9bullition&nbsp;le sucre, l\u2019eau, le de cacao en poudre et la cr\u00e8me liquide.<\/p>\n\n\n\n<p>M\u00e9langer\navec une spatule sans quitter le m\u00e9langer des yeux.<\/p>\n\n\n\n<p>D\u00e8s\nque l\u2019\u00e9bullition commence, stopper le feu.<\/p>\n\n\n\n<p>Verser\ndans un pichet haut et \u00e9troit, ajouter la g\u00e9latine essor\u00e9e et mixer aussit\u00f4t\navec un mixeur plongeant en le maintenant bien au fond et \u00e0 plat.<\/p>\n\n\n\n<p>Couvrir d\u2019un film \u00e9tirable et conserver au frigo jusqu\u2019au lendemain. <\/p>\n\n\n\n<h4><strong><em>Montage :<\/em><\/strong><\/h4>\n\n\n\n<p>Couler la mousse ivoire dans un moule et la mousse au chocolat noir dans l&rsquo;autre.<\/p>\n\n\n\n<p>Poser le brownie sur la mousse en appuyant tr\u00e8s doucement.<\/p>\n\n\n\n<p>Placer les moules au cong\u00e9lateur pendant toute une nuit. (voir plusieurs &#8230; <\/p>\n\n\n\n<p>Faire chauffer le gla\u00e7age a 35\u00b0 au bain-marie.<\/p>\n\n\n\n<p>D\u00e9mouler un moule \u00e0 la fois en prenant le soin de laisser le deuxi\u00e8me au cong\u00e9lateur jusqu&rsquo;au dernier moment.<\/p>\n\n\n\n<p>Placer l&rsquo;entremet sur deux verres renvers\u00e9s, eux-m\u00eames pos\u00e9s sur un plateau assez grand pour r\u00e9cup\u00e9rer l&rsquo;exc\u00e9dent de gla\u00e7age.<\/p>\n\n\n\n<p>Verser le gla\u00e7age d&rsquo;un seul coup et de fa\u00e7on uniforme et laisser bien \u00e9goutter.<\/p>\n\n\n\n<p>Proc\u00e9der exactement de la m\u00eame fa\u00e7on pour l&rsquo;autre moiti\u00e9.<\/p>\n\n\n\n<p>Choisir un grand plat de service permettant de poser les deux entremets sur le m\u00eame plat, c\u00f4te \u00e0 c\u00f4te.<\/p>\n\n\n\n<p>Placer l&rsquo;entremet au frigo minimum 6 avant de servir afin qu&rsquo;il d\u00e9cong\u00e8le compl\u00e8tement.<\/p>\n<div class=\"pdfprnt-buttons pdfprnt-buttons-post pdfprnt-top-bottom-right\"><a href=\"https:\/\/jardingourmandisa.com\/index.php?rest_route=%2Fwp%2Fv2%2Fposts%2F1193&print=print\" class=\"pdfprnt-button pdfprnt-button-print\" target=\"_blank\"><img src=\"https:\/\/jardingourmandisa.com\/wp-content\/plugins\/pdf-print\/images\/print.png\" alt=\"image_print\" title=\"Print Content\" \/><span class=\"pdfprnt-button-title pdfprnt-button-print-title\">Imprimer la recette<\/span><\/a><\/div>","protected":false},"excerpt":{"rendered":"<p>Imprimer la recette Deux entremets en un !
