On aime ou on deteste &#8230; il me rappelle mon enfance, car c&rsquo;est une gourmandise que je d\u00e9gustais dans le nord du Portugal au d\u00e9but des ann\u00e9es 80 et que l&rsquo;on trouve encore aujourd&rsquo;hui dans de rares endroits.<\/p>\n\n\n\n<!--more voir la recette-->\n\n\n\n<h3>Les ingr\u00e9dients :<\/h3>\n\n\n\n<ul><li>2 carr\u00e9s de p\u00e2te feuillet\u00e9e d\u00e9coup\u00e9e en rectangle et \u00e9tal\u00e9e \u00e0 3mm (environ 275 g)<\/li><li><\/li><\/ul>\n\n\n\n<p><strong><em>Pour la cr\u00e8me :<\/em><\/strong><\/p>\n\n\n\n<ul><li> 500 ml de lait<\/li><li> 250 g &nbsp;de sucre<\/li><li> 5 \u0153ufs<\/li><li> 8 feuilles de g\u00e9latine<\/li><li> 1 zeste de citron<\/li><li> poudre de cannelle q.s.<\/li><li> sucre en poudre q.s. <\/li><\/ul>\n\n\n\n<h3>Comment faire :<\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0<br>Faire cuire la p\u00e2te feuillet\u00e9e environ 10 minutes \u00e0 180\u00b0, en surveillant car la cuisson peut d\u00e9pendre des fours.<br>Pr\u00e9parer la cr\u00e8me.<br>Mettre le lait \u00e0 bouillir avec un zeste de citron.<br>Mettre les feuilles de g\u00e9latine \u00e0 tremper dans un r\u00e9cipient d&rsquo;eau froide pendant environ 10 minutes.\u00a0<br>S\u00e9parer les jaunes d&rsquo;\u0153ufs des blancs d&rsquo;\u0153ufs.<br>Battre 200 gr. de sucre avec les jaunes. Ajouter le lait chaud en m\u00e9langeant bien et remettre sur le feu pour \u00e9paissir l\u00e9g\u00e8rement sans \u00e9bullition.<br>Ajouter la g\u00e9latine essor\u00e9e et m\u00e9langer.<\/p>\n\n\n\n<p><br>Verser la pr\u00e9paration dans un bol et laisser refroidir sans la laisser se solidifier. <\/p>\n\n\n\n<p>Remuer de temps en temps pendant que cela refroidit.<\/p>\n\n\n\n<p><br>Une fois la cr\u00e8me froide, fouetter les blancs avec 50 gr en neige ferme.<br>M\u00e9langer les blancs avec la cr\u00e8me.<br>D\u00e9poser un carr\u00e9 de p\u00e2te dans un cercle \u00e0 p\u00e2tisserie carr\u00e9.<br>Ajouter la pr\u00e9paration cr\u00e9meuse.
