Laisser refroidir\nsur une grille.<\/p>\n\n\n\n<p>Reprendre le cercle, enlever le papier\naluminium et le nettoyer soigneusement.<\/p>\n\n\n\n<p>Le placer sur le plat de service et\nchemiser l\u2019int\u00e9rieur d\u2019une bande de rodho\u00efd.<\/p>\n\n\n\n<p><strong><em>Pr\u00e9parer le croustillant pralin\u00e9&nbsp;:<\/em><\/strong><\/p>\n\n\n\n<p>Faire fondre le chocolat au lait au\nbain-marie. Laisser ti\u00e9dir quelques instants.<\/p>\n\n\n\n<p>Ajouter la p\u00e2te de pralin\u00e9 et les gavottes\n\u00e9cras\u00e9es en grosses miettes.<\/p>\n\n\n\n<p>M\u00e9langer bien \u00e0 l\u2019aide d\u2019une spatule et \u00e9taler\nsur la dacquoise.<\/p>\n\n\n\n<p><strong><em>Pr\u00e9parer la mousse au chocolat&nbsp;:<\/em><\/strong><strong><em><\/em><\/strong><\/p>\n\n\n\n<p>Faire fondre le chocolat au bain-marie.<\/p>\n\n\n\n<p>Porter le lait \u00e0 \u00e9bullition et le verser\nsur le chocolat. <\/p>\n\n\n\n<p>M\u00e9langer \u00e0 l\u2019aide d\u2019une spatule jusqu\u2019\u00e0 ce\nque le m&nbsp;\u00bblange soit bien lisse et brillant.<\/p>\n\n\n\n<p>Laisser ti\u00e9dir.<\/p>\n\n\n\n<p>Monter la cr\u00e8me en chantilly et, d\u00e8s que le chocolat est presque froid, ajouter la&nbsp; chantilly (pas tout d\u2019un coup, mais 1\/3 \u00e0 la fois)<\/p>\n\n\n\n<p>D\u00e9poser la\ndacquoise doubl\u00e9e du croustillant pralin\u00e9 au fond du cercle.<\/p>\n\n\n\n<p>Verser la\nmousse et tapoter l\u00e9g\u00e8rement.<\/p>\n\n\n\n<p>Placer au cong\u00e9lateur jusqu\u2019au lendemain ou jusqu\u2019au jour du service, ce dessert pouvant \u00eatre pr\u00e9par\u00e9 plusieurs jours \u00e0 l\u2019avance et maintenu au cong\u00e9lateur jusqu\u2019au jour J.<\/p>\n\n\n\n<p><strong><em>Pr\u00e9parer le gla\u00e7age :<\/em><\/strong><\/p>\n\n\n\n<p>Mettre la g\u00e9latine \u00e0 tremper dans un grand bol d\u2019eau froide.<\/p>\n\n\n\n<p>Verser l\u2019eau, le sucre et le glucose dans une casserole et porter\n\u00e0 \u00e9bullition \u00e0 103\u00b0C.<\/p>\n\n\n\n<p>Retirer du feu, ajouter le lait concentr\u00e9 sucr\u00e9 et la g\u00e9latine\n\u00e9goutt\u00e9e puis m\u00e9langer doucement pour ne pas incorporer d\u2019air.<\/p>\n\n\n\n<p>Verser sur le chocolat et mixer \u00e0 l\u2019aide d\u2019un mixeur plongeant, en\nessayant de ne pas incorporer d\u2019air.<\/p>\n\n\n\n<p>D\u00e9poser un film au contact du gla\u00e7age et r\u00e9server 12 \u00e0 24 heures\nau r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<p>Faire chauffer le gla\u00e7age \u00e0 37\u00b0<\/p>\n\n\n\n<p>Mixer \u00e0 l\u2019aide d\u2019un mixeur plongeant pour homog\u00e9n\u00e9iser le gla\u00e7age.<\/p>\n\n\n\n<p>Verser le gla\u00e7age sur l\u2019ensemble du g\u00e2teau, en partant du milieu\net lisser le dessus rapidement avec une grande spatule.<\/p>\n\n\n\n<p><em>(Pour la d\u00e9co, en plus\ndu gla\u00e7age, j\u2019ai ajout\u00e9 des vermicelles de chocolat et des gavottes \u00e9cras\u00e9es\navec quelques amandes grill\u00e9es enrob\u00e9es de chocolat, type roses des sables afin\nd\u2019ajouter du croustillant)<\/em><\/p>\n<div class=\"pdfprnt-buttons pdfprnt-buttons-post pdfprnt-top-bottom-right\"><a href=\"https:\/\/jardingourmandisa.com\/index.php?rest_route=%2Fwp%2Fv2%2Fposts%2F1059&print=print\" class=\"pdfprnt-button pdfprnt-button-print\" target=\"_blank\"><img src=\"https:\/\/jardingourmandisa.com\/wp-content\/plugins\/pdf-print\/images\/print.png\" alt=\"image_print\" title=\"Print Content\" \/><span class=\"pdfprnt-button-title pdfprnt-button-print-title\">Imprimer la recette<\/span><\/a><\/div>","protected":false},"excerpt":{"rendered":"<p>Imprimer la recette Imprimer la recette<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_mi_skip_tracking":false},"categories":[135,1,113,157],"tags":[17,12,42],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v19.7.2 -
